Also known as dark speckled lentils, French green lentils have a peppery taste. They hold their shape well, but take longer to cook. 

 

Medium green lentils possess typical lentil flavor and texture and are used in soups, stews, salads and vegetarian recipes. 

Red lentils possess typical lentil flavor and texture and are used in soups, stews, salads and vegetarian recipes. 

 

Split red lentils are used in soups, stews, salads and vegetarian recipes. Split lentils cook faster than whole lentils.
